One very good reason, is precision. Precision allows you to
repeat a measurement in exactly the same amount every time.
People who use measuring cups are fooling themselves into believing their
measurements are accurate.
For example, using an 8 ounce dry measuring cup to measure flour, you
would expect to get exactly one cup (125 grams) of flour. But how tightly
packed is the flour? Did you spoon it out of the sack, or scoop it out with the
cup? Did you sift it? (By the way, sifting should only be done if the recipe
calls for it).
The point is, by using a measuring cup, you might get 125 grams; or you
might get much more; or even much less.
How could you possibly repeat that recipe precisely every time when using a
measuring cup? Of course, you can't. And that means the same meal might
be great one time, and lousy the next.
On the other hand, if you're using a scale, especially a digital scale, you
simply pour the flour from the sack until the display comes up to 125 grams;
now you've got exactly one cup, every time you do it - you can repeat that
recipe over and over with precision. No more anxiety over whether or not
you got it right. And, as an added bonus to you, wasn't that fast?
Once you've figured out exactly how much of an ingredient to use in a recipe
to make it great, write that number down; use it in that recipe every time.
That's repeatability; that's precision!
As I just mentioned, another good reason to get a scale is how much
faster your measuring will be - no more scooping with a measuring cup and
then leveling, and guessing. Simply pour the ingredient into a bowl set on
the scale and stop at the desired point.
Now, here's the really good part - once you've got that first ingredient in the
bowl, just zero out the scale and measure your next ingredient in the same
bowl! Less mess to clean up, faster measuring, and much more precision.
With a kitchen scale, you'll be known for your great meals - and you will
spend less time on the job of cooking, and more time enjoying the meal.
